1. Smash Burger Patty
Ingredients:
● 80/20 ground beef (80% beef/20% beef fat)
2. Remoulade Sauce
Ingredients:
● 70g mayo
● 20g yellow mustard
● 20g ketchup
● 40g raw finely diced onions
● Kosher salt to taste
● Black pepper to taste
Method (For Remoulade Sauce):
Combine all ingredients in a mixing bowl and mix until well incorporated. Store in an airtight container in the refrigerator for up to 5 days in advance.
3. Caramelized Onion Dip for Chips
Ingredients:
● 250g sour cream
● 50g sliced green onions
● 70g caramelized onions
● Kosher salt to taste
● Black pepper to taste
Method (For Caramelized Onion Dip):
Combine all ingredients in a mixing bowl and mix until well incorporated. Store in an airtight container in the refrigerator for up to 5 days in advance.
Method (For Smash Burger):
Form your beef burger patty balls and toss ball continuously into the palm of your hand and squeeze to push out any air inside the patty ball. Aim for about 3oz per patty so that you can do two patties per burger.
Add a small amount of canola oil onto your preheated Prokan Cast Iron Griddle, place your patties onto the flat top and press thinly with a burger press. Let the burgers sear for about 2 minutes on each side. They are very thin and will cook and sear quickly. Season each side with kosher salt.
Sear your buttered burger buns before you flip the patties to cook on the second side. Using a metal scrapper, scrape the patties off the cast iron grill and flip to sear the second side.
As soon as you flip your patty, add your cheese and let the cheese melt.
Check on your burger buns, once they are nice and toasted remove from grill and keep warm.
Assemble your burger with your favorite toppings and the remoulade sauce and enjoy.
